Chocolate is made from the bean of the Cacao fruit. Cacao production came to a halt in Central America and the Caribbean after it was threatened first by the Monilia fungus in the late 70s and then by large scale and unsustainable agricultural practices in the region. In recent years thousands of small farmers, often from indigenous groups have organized under cooperatives and alliances to grow sustainable and organically certified Cacao. The only thing they were missing is a large enough market of conscious consumers that would support their mission to rescue sustainable Cacao production in the whole region.
Kopali's Cacao comes from the thousands of Central American and Caribbean organic farmers in search for new supportive markets.
